How can I make geany go back to adding a + for when marking a found string, not highlighting? Or change the highlighting color? I poked about in preferences but did not see it, and light-green is not too eye-catching.

Why do you want this feature ? Because, you can use Ctrl+G to find the next occurence.
That is a workaround, but ideally being able to change the mark color, maybe in editor -> display, would be great.

In the Find dialog, uncheck "Close dialog" before clicking on "Mark", then the dialog will stay open and you can easily change the search string.

Have a look at the "marker_search" setting in filetypes.common. The documentation has details about it. http://geany.org/manual/#special-file-filetypes-common
